Spicy Artichoke Pesto Pasta

  • 12 oz Spaghetti
  • 3 Tbsp Pesto
  • 1 can Artichoke Hearts; Chopped
  • 3 Cloves Garlic; Minced
  • 1 Tbsp Olive Oil (use any of our EVOO’s)
  • ½ t Red Pepper Flakes
  • 4 Tbsp Spicy Calabrian Pesto Olive Oil
  • ¼ C. Pasta Water
  • ½ C. Shredded Parmesan
  • Salt & Pepper; To Taste
  1. Cook Pasta. Bring 6 cups of salted water to a boil, add spaghetti and cook according to package instructions. Save ¼ cup of the water and drain. 
  2. Meanwhile, heat olive oil in a pan over medium heat. Add garlic and cook until fragrant, about 2 minutes. Add artichokes and pesto, cook for an additional 3-4 minutes. Turn off heat and set aside.
  3. In a large serving dish, add pasta and toss with Spicy Calabrian Pesto Olive Oil, pasta water, and artichoke pesto mixture.
  4. Top with parmesan and red pepper flakes, season with salt & pepper & serve!
