- 12 oz Spaghetti
- 3 Tbsp Pesto
- 1 can Artichoke Hearts; Chopped
- 3 Cloves Garlic; Minced
- 1 Tbsp Olive Oil (use any of our EVOO’s)
- ½ t Red Pepper Flakes
- 4 Tbsp Spicy Calabrian Pesto Olive Oil
- ¼ C. Pasta Water
- ½ C. Shredded Parmesan
- Salt & Pepper; To Taste
- Cook Pasta. Bring 6 cups of salted water to a boil, add spaghetti and cook according to package instructions. Save ¼ cup of the water and drain.
- Meanwhile, heat olive oil in a pan over medium heat. Add garlic and cook until fragrant, about 2 minutes. Add artichokes and pesto, cook for an additional 3-4 minutes. Turn off heat and set aside.
- In a large serving dish, add pasta and toss with Spicy Calabrian Pesto Olive Oil, pasta water, and artichoke pesto mixture.
- Top with parmesan and red pepper flakes, season with salt & pepper & serve!
