- 4 Salmon Filets
- Salt to Taste
- 3 Serrano Peppers; Minced
- 3 Cloves Garlic; Minced
- 1 ½ Tbsp Olive Oil (we used the Lemon Olive Oil)
- ½ C. Serrano Honey Balsamic Vinegar
- ¼ C. Brown Sugar
- 2 Tbsp Lemon Juice
- Preheat the oven to 350 degrees. Meanwhile, heat 1 T olive oil in a non-stick pan over medium heat. Add peppers and garlic. Saute until fragrant, about 3-4 minutes.
- Add vinegar, brown sugar and lemon juice. Bring to a boil, reduce heat and let it simmer for 10 minutes, or until glaze coats the back of a spoon. (Be careful not to overcook or the glaze will harden.)
- Place salmon filets on a sheet pan, pat dry. Season with salt and brush with remaining olive oil. Spoon or brush glaze over salmon filets and bake for 10 minutes or until the fish flakes with a fork.
- Remove from the oven and serve with rice & remaining glaze!
