- 3-4 Russet Potatoes
- 3 Tbsp Rosemary Olive Oil
- 2 Tbsp Fresh Rosemary; Chopped
- ¼ Red Onion; Sliced
- â…“ C Fresh Grated Parmesan Cheese
- Preheat the oven to 400 degrees. Wash potatoes and cut into 1 inch cubes (you could also peel potatoes if you choose)
- Toss potatoes with olive oil, fresh rosemary and red onion.
- Roast on a baking sheet for 20-25 minutes or until potatoes are tender. Add parmesan and roast for an additional 3-4 minutes & serve!
