Roasted Rosemary Parmesan Potatoes

  • 3-4 Russet Potatoes
  • 3 Tbsp Rosemary Olive Oil
  • 2 Tbsp Fresh Rosemary; Chopped
  • ¼ Red Onion; Sliced
  • â…“ C Fresh Grated Parmesan Cheese
  1. Preheat the oven to 400 degrees. Wash potatoes and cut into 1 inch cubes (you could also peel potatoes if you choose)
  2. Toss potatoes with olive oil, fresh rosemary and red onion.
  3. Roast on a baking sheet for 20-25 minutes or until potatoes are tender. Add parmesan and roast for an additional 3-4 minutes & serve!
