- 1 lb Fresh Tomatoes
- 5 Garlic Cloves; Smashed
- 1 Medium Onion; Quartered
- 2 Tbsp Basil Olive Oil
- 1 Tbsp Traditional Balsamic Vinegar
- 2 Tbsp Fresh Basil
- 2 Tbsp Fresh Oregano
- Prepare tomatoes. Preheat the oven to 425 degrees. Half tomatoes & place on a rimmed baking sheet. Add garlic and onion; toss with olive oil. Drizzle with balsamic vinegar & season with salt & pepper; to taste.
- Roast for 40 minutes or until tomatoes are softened & slightly charred.
- Let cool for 10-15 minutes.
- Transfer to a large bowl, add fresh basil & oregano.
- Using an immersion blender, blend until smooth. Serve immediately over pasta, or freeze!
