Roasted Basil Tomato Sauce

  1. Prepare tomatoes. Preheat the oven to 425 degrees. Half tomatoes & place on a rimmed baking sheet. Add garlic and onion; toss with olive oil. Drizzle with balsamic vinegar & season with salt & pepper; to taste.
  2. Roast for 40 minutes or until tomatoes are softened & slightly charred.
  3. Let cool for 10-15 minutes.
  4. Transfer to a large bowl, add fresh basil & oregano.
  5. Using an immersion blender, blend until smooth. Serve immediately over pasta, or freeze!
