Venison
- 1 lb Venison Tenderloin
- 1 pkg Rice Noodles
- 4 Green Onions; Diced
- 1 Tbsp Extra Virgin Olive Oil
Marinade:
- 1 tsp sugar
- 1 Tbsp Cornstarch
- 1 Tbsp Soy Sauce (or Coconut Aminos for Gluten Free)
- 1 tsp Rice Vinegar
- 2 Tbsp Sesame Oil
Sauce:
- 1 tsp Minced Ginger
- 1 Tbsp Minced Garlic
- ½ C Soy Sauce
- ½ Beef Broth
- 1 Tbsp Cornstarch
- Prepare Meat. Slice meat, against the grain, into 1 inch strips. Combine the marinade ingredients in a large bowl & add meat. Marinade for at least one hour or up to 4.
- Prepare Noodles. Fill a large pot with water & bring to a boil. Add noodles & cook according to package instructions.
- While the noodles are cooking, heat olive oil in a large pan or wok. Add meat and let cook, untouched, for 1-2 minutes or until browned. Flip & brown the other side. Then stir meat frequently for 1-2 more minutes or until meat is cooked through. Add green onions & cook for an additional 1-2 minutes or until the onions are wilted.
- Prepare Sauce. While meat is cooking, mix the sauce ingredients in a bowl.
- Once meat is cooked, add sauce. Bring to a boil, and then turn down the heat, simmering until sauce is slightly thickened.
- Add cooked noodles to the meat & sauce, toss & serve hot! Garnish with additional fresh green onions
