Asian Venison & Rice Noodles

Venison

Marinade:

  • 1 tsp sugar
  • 1 Tbsp Cornstarch
  • 1 Tbsp Soy Sauce (or Coconut Aminos for Gluten Free)
  • 1 tsp Rice Vinegar
  • 2 Tbsp Sesame Oil

Sauce:

  • 1 tsp Minced Ginger
  • 1 Tbsp Minced Garlic
  • ½ C Soy Sauce
  • ½ Beef Broth
  • 1 Tbsp Cornstarch
  1. Prepare Meat. Slice meat, against the grain, into 1 inch strips. Combine the marinade ingredients in a large bowl & add meat. Marinade for at least one hour or up to 4.
  2. Prepare Noodles. Fill a large pot with water & bring to a boil. Add noodles & cook according to package instructions.
  3. While the noodles are cooking, heat olive oil in a large pan or wok. Add meat and let cook, untouched, for 1-2 minutes or until browned. Flip & brown the other side. Then stir meat frequently for 1-2 more minutes or until meat is cooked through. Add green onions & cook for an additional 1-2 minutes or until the onions are wilted.
  4. Prepare Sauce. While meat is cooking, mix the sauce ingredients in a bowl.
  5. Once meat is cooked, add sauce. Bring to a boil, and then turn down the heat, simmering until sauce is slightly thickened.
  6. Add cooked noodles to the meat & sauce, toss & serve hot! Garnish with additional fresh green onions
