Tuscan Roasted Tomatoes

  • 1 Pint Cherry Tomatoes
  • 2 Tbsp Tuscan Olive Oil
  • Sea Salt; To Taste
  • 1 Clove Garlic; Minced

  1. Preheat the oven to 450 degrees. While the oven is preheating, wash the tomatoes well and then toss in a medium sized bowl with olive oil, salt & garlic.
  2. Pour tomatoes onto a sheet pan and roast for 15-20 minutes or until bursting, stirring halfway through. Let cool slightly & enjoy!

Tips

  • These are delicious on their own, but can be used as a bruschetta topper, in pasta salad or any other recipes that call for roasted tomatoes.
  • You can also put them in a mason jar, add additional olive oil to cover, and store in the refrigerator for up to two weeks.
