- 9 Medium Yellow Onions
- ¼ C Cilantro & Roasted Onion Olive Oil
- 2 T Butter; Thinly Sliced
- Sea Salt & Black Pepper; To Taste
- Fresh Cilantro
- Preheat the oven to 375 degrees. Cut the tops off of each onion, but leave most of the skins on.
- Arrange onions on a rimmed sheet pan & drizzle with olive oil. Place a thin pat of butter on each onion.
- Sprinkle generously with salt & pepper. Top with a sprig of cilantro.
- Roast for 25 minutes until tender.
- Increase oven temp to 400 degrees. Cook for an additional 30-35 minutes until the tops are browned.
- Remove from the oven and allow to cool slightly. Remove skins, slice & enjoy!
