Roasted Tomato & Oregano Tortellini

  • 4 Cups Cherry Tomatoes
  • 10 Cloves Garlic; Minced
  • 4 T. Oregano Olive Oil
  • 1 t. Crushed Red Pepper
  • 2-3 Leaves Fresh Oregano; Torn (Plus More for Garnish)
  • Salt & Pepper; To Taste
  • 2-9 oz Tortellini Packages
  • 8 oz  Fresh Mozzarella Balls
  1. Roast Tomatoes. Preheat the oven to 400 degrees. On a sheet pan, add the first six ingredients and toss until tomatoes are well coated with ingredients.
  2. Roast tomatoes in the oven for 25 minutes or until bursting and slightly charred. Toss every 10 minutes or so.
  3. Cook Pasta. Meanwhile, cook tortellini according to directions on the package. Drain.
  4. Toss cooked tortellini with roasted tomatoes and mozzarella balls.
  5. Garnish with fresh oregano and serve with warm baguette bread!

Ready in 30 Minutes
