- 1 Loaf Italian or French Bread
- 1 T. Olive Oil (use any of our Ultra Premium EVOO’s or the Tuscan)
- 2 Mangos; Peeled & Diced
- 8 oz Goat Cheese
- ¼ C Alfoos Mango White Balsamic Vinegar
- ¼ C Fresh Thai Basil; Chopped
- Pinch of Salt
- Prepare Bruschetta. In a medium sized bowl, combine mango, white balsamic vinegar, salt and thai basil. Let sit for 10-15 minutes.
- Preheat the oven to 350 degrees. Slice the bread into ½ in thick pieces. Brush with olive oil. Bake for 10-15 minutes until lightly toasted.
- Let the bread cool. Meanwhile, cut goat cheese into thin slices. Place atop cooled bread. Spoon 2 tablespoons of bruschetta mixture over the cheese. Serve immediately!
Tips
If you cannot find Thai Basil, regular basil will work as well.
If you are in a rush, you can broil the bread as well, just watch it closely as it can burn quickly!
