Mango Goat Cheese Bruschetta

  1. Prepare Bruschetta. In a medium sized bowl, combine mango, white balsamic vinegar, salt and thai basil. Let sit for 10-15 minutes.
  2. Preheat the oven to 350 degrees. Slice the bread into ½ in thick pieces. Brush with olive oil. Bake for 10-15 minutes until lightly toasted.
  3. Let the bread cool. Meanwhile, cut goat cheese into thin slices. Place atop cooled bread. Spoon 2 tablespoons of bruschetta mixture over the cheese. Serve immediately!

Tips

If you cannot find Thai Basil, regular basil will work as well.

If you are in a rush, you can broil the bread as well, just watch it closely as it can burn quickly!

Ready in 20 minutes

Serves 6-8 people
