Kale Salad w/ Lemon Basil Vinaigrette

  • 1 Bunch Kale
  • 1 Tbsp Basil Olive Oil
  • 1 t Sea Salt
  • ⅓ Cup Grated Parmesan
  • ¼ Cup Diced Red Onion
  • ⅓ Cup Dried Cranberries
  • ¼ Cup Sunflower Seeds

Dressing:

  • ¼ C Basil Olive Oil
  • 1 Whole Lemon; Juiced & Zested
  • 2 Tbsp Sugar
  • 1 tsp Dijon Mustard
  • 1 Tbsp Fresh Basil; Diced
  1. Prepare kale. Remove stems & discard. In a large bowl, combine kale, olive oil & salt. Using your hands, massage the kale for 3-4 minutes to break down the tough leaves & give it a softer texter.
  2. Add remaining salad ingredients.
  3. Prepare Dressing. Combine all dressing ingredients and whisk until combined.
  4. Add dressing to salad and toss to combine! Enjoy!

Ready in 20 minutes
