- 1 Bunch Kale
- 1 Tbsp Basil Olive Oil
- 1 t Sea Salt
- ⅓ Cup Grated Parmesan
- ¼ Cup Diced Red Onion
- ⅓ Cup Dried Cranberries
- ¼ Cup Sunflower Seeds
Dressing:
- ¼ C Basil Olive Oil
- 1 Whole Lemon; Juiced & Zested
- 2 Tbsp Sugar
- 1 tsp Dijon Mustard
- 1 Tbsp Fresh Basil; Diced
- Prepare kale. Remove stems & discard. In a large bowl, combine kale, olive oil & salt. Using your hands, massage the kale for 3-4 minutes to break down the tough leaves & give it a softer texter.
- Add remaining salad ingredients.
- Prepare Dressing. Combine all dressing ingredients and whisk until combined.
- Add dressing to salad and toss to combine! Enjoy!
