- 4 Cups Cherry Tomatoes
- 10 Cloves Garlic; Minced
- 4 T. Oregano Olive Oil
- 1 t. Crushed Red Pepper
- 2-3 Leaves Fresh Oregano; Torn (Plus More for Garnish)
- Salt & Pepper; To Taste
- 2-9 oz Tortellini Packages
- 8 oz Fresh Mozzarella Balls
- Roast Tomatoes. Preheat the oven to 400 degrees. On a sheet pan, add the first six ingredients and toss until tomatoes are well coated with ingredients.
- Roast tomatoes in the oven for 25 minutes or until bursting and slightly charred. Toss every 10 minutes or so.
- Cook Pasta. Meanwhile, cook tortellini according to directions on the package. Drain.
- Toss cooked tortellini with roasted tomatoes and mozzarella balls.
- Garnish with fresh oregano and serve with warm baguette bread!
