Sicilian Lemon Potato Salad

  • 5 lbs diced and cooked red potatoes
  • ½ cup Dill Olive Oil
  • 2 ½ tbsp Sicilian Lemon White Balsamic Vinegar
  • ¼ tsp fresh dill, chopped
  • 1 tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  1. Combine ingredients and pour over diced, cooked and still warm red potatoes.  
  2. Enjoy at room temperature or chilled.
