- 3 firm pears, halved and cored
- 2 tablespoons UP Extra Virgin Olive Oil
- 2 tablespoons Cranberry Pear Balsamic
- ¼ cup crumbled Gorgonzola
- ¼ cup toasted Walnuts, roughly chopped
- Fresh Thyme (optional)
- Pinch of sea salt
- Freshly cracked black pepper
- Preheat oven to 400°F. Arrange the pear halves on a parchment-lined baking sheet.
- Drizzle with EVOO and Cranberry Pear Balsamic, seasoning with a pinch of salt and pepper.
- Roast for 20–25 minutes, or until the pears are tender and lightly caramelized.
- Remove from the oven and top immediately with crumbled gorgonzola and toasted walnuts.
- Optional: Move the pears to the middle rack and broil for 1–2 minutes, just until the cheese softens and the nuts deepen in color. Watch closely to avoid burning.
- Garnish with fresh thyme and serve warm as appetizer or side dish.
