Pumpkin Chocolate Chip Muffins

  • ¾ c. Pumpkin Puree
  • 2 Eggs
  • ½ Sugar Free Maple Syrup
  • 2 c. Almond Flour
  • ¼ c. Ground Flaxseed
  • 1 t. Baking Soda
  • 1 t. Cinnamon
  • 1 ½ t. Pumpkin Pie Spice
  • ½ t. Salt
  • 1 t. Vanilla
  • 1 t. Maple Balsamic
  • ¼ c. Butter Olive Oil
  • Chocolate Chips (I use Enjoy Life Mini Semi-Sweet Chips)
  1. Mix all ingredients together, stir and spoon into muffins tins.
  2. Bake for 16 min at 350
