- 2 Sweet Potatoes
- 2 Tbsp Half & Half
- 2 Tbsp Butter
- 2 Tbsp Sage Olive Oil
- ½ tsp Garlic Powder
- Salt & Pepper; To Taste
- Prepare potatoes. Wash & peel potatoes, then cut into 1-2 inch cubes. Add potatoes to a medium pot of salted water & bring to a boil.
- Once potatoes are soft enough to be pierced with a fork, drain potatoes & return to the pot.
- Add butter and mash potatoes until smooth. (An immersion blender would work well for this)
- Add remaining ingredients & mix well.
- Salt & pepper to taste; then serve immediately!
