- 2 lbs Carrots; Washed (Peeled if desired)
- 2 Tbsp Butter; Melted
- 2 Tbsp Herbes de Provence Olive Oil
- 1 Tbsp Fresh Chopped Chives
- 1 Tbsp Fresh Chopped Parsley
- 1 Tbsp Fresh Thyme
- 1 Garlic Clove; Minced
- Salt & Pepper; To Taste
- Preheat the oven to 350 degrees. In a small bowl, combine butter, olive oil, fresh herbs, garlic & salt & pepper.
- Combine carrots with butter and oil mixture; tossing until carrots are well coated.
- Spread carrots on a baking sheet in one layer.
- Cook for 25-30 minutes, or until softened to your liking and slightly browned! Enjoy!
