Herbes de Provence Roasted Carrots

  • 2 lbs Carrots; Washed (Peeled if desired)
  • 2 Tbsp Butter; Melted
  • 2 Tbsp Herbes de Provence Olive Oil
  • 1 Tbsp Fresh Chopped Chives
  • 1 Tbsp Fresh Chopped Parsley
  • 1 Tbsp Fresh Thyme
  • 1 Garlic Clove; Minced
  • Salt & Pepper; To Taste
  1. Preheat the oven to 350 degrees. In a small bowl, combine butter, olive oil, fresh herbs, garlic & salt & pepper.
  2. Combine carrots with butter and oil mixture; tossing until carrots are well coated.
  3. Spread carrots on a baking sheet in one layer.
  4. Cook for 25-30 minutes, or until softened to your liking and slightly browned! Enjoy!
