- 1 Large Onion; Thinly Sliced
- 1 Apple (Honey Crisp or Granny Smith); Thinly Sliced
- 1 T. Olive Oil (try any unflavored Ultra Premium EVOO)
- 1 T. Red Apple Balsamic Vinegar
- 4 Slices Sourdough Bread
- 1 T. Butter
- 4 Slices Irish Cheddar Cheese
- 1 T. Apple Butter (optional)
- Heat a large pan on medium and drizzle with olive oil. Saute onions, stirring occasionally, until softened and starting to brown, about 10 minutes. Season with kosher salt & freshly ground pepper. Add Red Apple Balsamic and cook for 5 more minutes.
- Butter one side of each bread slice, layer two of the slices with apple butter (if using) cheese, onions and apples. Top with remaining slices of bread, butter side up.
- Grill sandwiches until browned and crispy and cheese is melted. Slice & serve warm!
