Apple Balsamic Onion Grilled Cheese

  • 1 Large Onion; Thinly Sliced
  • 1 Apple (Honey Crisp or Granny Smith); Thinly Sliced
  • 1 T. Olive Oil (try any unflavored Ultra Premium EVOO)
  • 1 T. Red Apple Balsamic Vinegar
  • 4 Slices Sourdough Bread
  • 1 T. Butter
  • 4 Slices Irish Cheddar Cheese
  • 1 T.  Apple Butter (optional)

  1. Heat a large pan on medium and drizzle with olive oil. Saute onions, stirring occasionally, until softened and starting to brown, about 10 minutes. Season with kosher salt & freshly ground pepper. Add Red Apple Balsamic and cook for 5 more minutes.
  2. Butter one side of each bread slice, layer two of the slices with apple butter (if using) cheese, onions and apples. Top with remaining slices of bread, butter side up.
  3. Grill sandwiches until browned and crispy and cheese is melted. Slice & serve warm!
