Mashed Sage Butter Sweet Potatoes

  • 2 Sweet Potatoes
  • 2 Tbsp Half & Half
  • 2 Tbsp Butter
  • 2 Tbsp Sage Olive Oil
  • ½ tsp Garlic Powder
  • Salt & Pepper; To Taste
  1. Prepare potatoes. Wash & peel potatoes, then cut into 1-2 inch cubes. Add potatoes to a medium pot of salted water & bring to a boil.
  2. Once potatoes are soft enough to be pierced with a fork, drain potatoes & return to the pot.
  3. Add butter and mash potatoes until smooth. (An immersion blender would work well for this)
  4. Add remaining ingredients & mix well.
  5. Salt & pepper to taste; then serve immediately!

Serves 2-4 People
