Roasted Pears with Gorgonzola & Walnuts

  • 3 firm pears, halved and cored
  • 2 tablespoons UP Extra Virgin Olive Oil
  • 2 tablespoons Cranberry Pear Balsamic
  • ¼ cup crumbled Gorgonzola
  • ¼ cup toasted Walnuts, roughly chopped
  • Fresh Thyme (optional)
  • Pinch of sea salt
  • Freshly cracked black pepper
  1. Preheat oven to 400°F. Arrange the pear halves on a parchment-lined baking sheet.
  2. Drizzle with EVOO and Cranberry Pear Balsamic, seasoning with a pinch of salt and pepper.
  3. Roast for 20–25 minutes, or until the pears are tender and lightly caramelized.
  4. Remove from the oven and top immediately with crumbled gorgonzola and toasted walnuts.
  5. Optional: Move the pears to the middle rack and broil for 1–2 minutes, just until the cheese softens and the nuts deepen in color. Watch closely to avoid burning.
  6. Garnish with fresh thyme and serve warm as appetizer or side dish.
